In our olive groves in the Peloponnese region, we cultivate throughout  the year our 10,000 olive trees with absolute care and under frequent checks for the best and most quality possible yield.

So, here we are in the beginning of November, ready to start the harvesting of our olive trees. It is important for us  to avoid the injury of the fruit and tree as well, for this reason we use the latest technology methods of harvesting. Subsequently, olives are transferred in lugs with ventilation holes in our proprietary mill where production directly begins by modernized machines under optimum conditions of oil extraction (cold pressing). Last process is the filtering ( with paper filters) which supports our olive oil's high quality without altering the chemical and organoleptic characteristics as well as its aromas.

Once the olive oil is extracted, it is stored with nitrogen in stainless food tanks for about 20 days to "rest" from the production process. In this way we ensure maximum quality up to the bottling stage.

Our bottler unit certified by ISO 22000: 2005, is equipped with modern automatic bottling machines that contribute to the rapid and proper standardization of olive oil in various packages. Following the standardization stage, our packaged products are transported in special dark rooms under controlled temperatures until they are put into distribution.
